Twist On: Jamie Oliver: Pukka Pineapple with bashed-up Mint Sugar.
This is the smallest of twists on a dessert that’s hard to beat for simplicity and flavour. We’ve substituted berries and nectarine for the original pineapple, that’s it! With fruit this good there’s little need to enhance it, but the little zing of sweet mint gives it another dimension. All you need is a bunch of mint, some caster sugar and something to bash them together with. Add a dollop of lemon myrtle yoghurt and I’m in summer fruit heaven.
- You can play with the ratio of mint/sugar/fruit to your own taste. Don’t be heavy-handed with the sugar, unless your fruit is particularly sour.
- Many fruits would work, particularly summer fruits and those that have some natural sourness like raspberries. These fruits won’t be in season much longer, so now is your last chance to enjoy them before next summer!
